Ingredients for 3 servings:

  • 450 g sweet potatoes
  • 2 large carrots
  • 1 large bell pepper(s)
  • 2 m.-sized onion(s)
  • 1 tbsp olive oil
  • 2 tbsp tomato paste
  • 2 tsp curry powder
  • 2 tsp turmeric
  • 1 tsp garam masala
  • 200 g lentils, red
  • 500 ml coconut milk
  • 250 ml vegetable stock
  • 150 g rice
  • tortilla chips

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 45 minutes

Cook the rice according to the package instructions with a pinch of salt. Peel and dice the sweet potatoes. Slice the carrots, dice the bell pepper, peel the garlic, and finely chop the onions. Heat the olive oil in a large pot and sauté the onions until translucent. Press the garlic into the pot and fry briefly, then add the sweet potatoes and bell peppers. Add the tomato paste and spices and fry briefly, then add the lentils. Pour in the coconut milk and vegetable stock and simmer for about 25 minutes. Arrange the rice in the middle of the plates and the curry in a mop of curls on top. Use the remaining carrot slices to create a funny face on the rice! Use two tortilla chips for the collar.
