Ingredients for 1 servings:
- 225 g flour
- 200 g butter, cold
- 100 g sugar
- 1 egg(s)
- 150 g ground almonds
- ½ tsp cinnamon
- ¼ lemon(s), untreated, zest
- 1 egg yolk
- 1 tbsp whipped cream
- 150 g jam (raspberry jam)
- 1 tbsp powdered sugar
- Flour for the work surface
Instructions
Working time approx. 1 hour 15 minutes; Rest time approx. 2 hours; Total time approx. 3 hours 15 minutes
Sift the flour onto a work surface. Add the butter in flakes, sugar, egg, almonds, cinnamon, and lemon zest. Quickly knead with cold hands until you have a smooth dough. Wrap the dough in cling film and chill for about 1 hour. Roll out the dough on a floured surface until it is about 3 mm thick. Cut out 28 stars, each 6 cm and 7 cm in diameter. Cut out more small stars in the center of the small stars. Place all the stars on three baking sheets lined with baking paper. Whisk the egg yolk with the cream. Spread the mixture over the cookies. Bake the baking sheets one after the other in a preheated oven (200°C) for 8-10 minutes using the top/bottom heat option. Remove the cookies from the oven and let them cool. Heat the jam and stir until smooth. Spread the jam on the bottom of the cookies with the star-shaped hole and place it on the whole star. Fill the star-shaped holes with jam. Let it dry. Finally, dust with powdered sugar.
