Linzer eyes with wholemeal flour

Ingredients for 1 servings:

  • 500 g wheat flour (wholemeal)
  • 2 pinches of baking powder
  • 200 g butter
  • 200 g honey
  • 2 egg yolks
  • 5 tbsp whipped cream
  • some lemon peel, grated
  • Jam, for filling as desired

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 10 minutes

makes about 60 pieces

Mix flour with baking powder. Cut cold butter into pieces and crumble with the flour. Add the remaining ingredients and quickly knead into a dough. Place this in the refrigerator for about 1 hour. Knead briefly again before processing. Roll out the dough to a thickness of 3mm and cut out discs with a diameter of 5cm. Cut a hole in the center of every second disc. Place on a baking sheet lined with baking paper and bake in a preheated oven at 200°C for about 10 minutes until golden brown. Once cooled, spread one of the unperforated discs with jam and place the perforated one on top. If you like, sprinkle with powdered sugar before placing the perforated one on top to make the jam stand out more. I also like to fill them with hazelnut nougat or Nutella and decorate them with a chocolate glaze. The cookies have a nutty flavor, even though there are no nuts in them.
