Ingredients for 4 servings:
- 1 kg chicken liver(s)
- 40 slices of breakfast bacon
- Pepper, mixed, freshly ground
- 1 jar of green olives without stones, drained weight: 135 g
- 1 tsp caraway seeds, ground
- 1 tsp sweet paprika powder
- 100 ml olive oil
Instructions
Working time approx. 30 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 30 minutes; Total time approx. 13 hours
Rinse the liver and pat dry. Wrap each piece of liver with a slice of ham and then thread it onto wooden skewers. Puree the olives and mix with the remaining marinade ingredients. Sprinkle the skewers with freshly ground pepper and place them in a bowl. Spread the marinade evenly over the skewers, cover, and refrigerate overnight. Cook the skewers on the bottom rack of the oven at 200°C (top/bottom heat) for about 30 minutes (turning after 15 minutes).
