Loaded Fries with Pumpkin and Feta

Ingredients for 2 servings:

  • 300 g butternut squash
  • 1 shot of oil
  • 400g French fries
  • e.g. salt (French fries salt)
  • e.g. mayonnaise
  • 1 feta cheese
  • some parsley

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Fries meets pumpkin

Preheat the oven to 200°C (top/bottom heat). Peel, deseed, and dice the pumpkin, and toss with oil. Arrange the pumpkin cubes on a baking sheet lined with parchment paper and bake for 15 minutes. Then set the oven to 200°C (grill setting) and bake the pumpkin for another 10 minutes until golden brown. Turn the cubes occasionally between baking. Meanwhile, bake the French fries in an air fryer for 15 minutes until golden brown, then season with French fries salt. Drain the feta and crumble it into small pieces. Serve the French fries one after the other with the braised pumpkin cubes, mayonnaise, feta, and parsley.
