Loewe Fillet with Cold Paprika Sauce and Zucchini Vegetables
The perfect loewe fillet with cold paprika sauce and zucchini vegetables recipe with a picture and simple step-by-step instructions.
- 700 g Loewe fillet
- 1 size Red peppers
- 1 size Beefsteak tomato fresh
- 1 size Chili peppers red
- 1 disc Whole grain toast
- 1 Fresh lime
- 50 g Walnut kernels
- 5 tbsp Extra virgin olive oil
- 3 tbsp Tomato paste concentrated three times
- 100 g Green olives without stone
- 2 Fresh onions approx. 100g
- 2 Fresh zucchini approx. 500g
- Salt and pepper
- Chopped parsley
- Flour
- 2 tbsp Lime juice
Preparation:
- I preheated the oven to 200 ° C (225 ° C without convection).
- First of all, put the washed bell pepper on the baking sheet lined with baking paper.
- After 5 minutes, put the beefsteak tomatoes and chili peppers on the tray). Roast for another 20 minutes.
- After a total of 25 minutes, we now take peppers, tomatoes and chilli peppers out of the oven and let everything cool down under a damp cloth.
- Now the peppers and tomatoes are peeled, quartered and pitted. The pepper is only halved and pitted. Then cut everything into pieces. Remove the rind from the wholemeal toast and cut into cubes.
- Strip the onions, cut in half and cut into half rings.
- Cut the olives into rings.
- Squeeze the lime.
- Toast walnuts in a pan WITHOUT any fat.
- Wash the zucchini, dry, cut in half and cut into approx. 5 mm cubes.
- Pluck the parsley from the stalks, save the stalks.
- Wash stone bites and pat dry
Preparation of the cold paprika sauce:
- In a measuring cup I first put the olive oil, then the tomato paste and the lime juice and mixed well with the magic wand.
- Now gradually add the peppers (puree), tomato pieces (puree), pepper (puree) and the walnuts (also puree). I also cut the leftover parsley stalks into small pieces and added them. Finally, season with salt and pepper. The sauce is now ready (by the way, it can be prepared the day before) and off with it in the fridge.
The zucchini vegetables:
- Heat the oil in a large pan and fry the zucchini cubes well. Then add the onions and fry them too. Just before the end of the roasting time, add the olives and parsley and season everything with pepper and a little salt.
Wolffish:
- Cut the wolffish into pieces, season with pepper, salt and flour. Knock off excess flour.
- Heat the olive oil in a pan and fry the wolffish on each side for approx. 3-4 minutes over medium heat.
- Now everything is ready and can be served on plates. A light, dry white wine and possibly some baguette or rice go well with this. Everyone as he / she likes.
