Lombrico soup

Ingredients for 4 servings:

  • 2 eggs
  • 2 tbsp Parmesan, grated
  • 4 tbsp breadcrumbs (Muschel flour)
  • ½ tsp turmeric
  • some pepper, ground
  • some cayenne pepper, ground
  • some nutmeg, ground
  • n. B. Soup of your choice (homemade or from a jar)

Working time approx. 10 minutes; Total time approx. 10 minutes

Earthworm soup, a delicious soup garnish with Parmesan

Beat the eggs well with a hand mixer, but not until foamy. Add the turmeric, pepper, cayenne pepper, and nutmeg. Then stir in the grated Parmesan cheese. Finally, add the flour and mix thoroughly. Let the batter rest for about 10-15 minutes, then mix well again with a hand mixer. In the meantime, bring the soup to a boil. Fill the finished batter into a decorating syringe. Use a nozzle with a diameter of about 1/2 cm. Now pipe the batter into the boiling soup. Depending on your stamina, you can make shorter worms or really long snakes. Once you’ve used up all the batter, put the lid on the pot, and let the worms simmer gently for about 5-10 minutes. Serve hot.
