Ingredients for 6 servings:
- 2 cans of corn kernels
- 1 kg potatoes
- 1 cup sour cream
- 2 eggs
- 300 g cheese
- 50 g flour
- 1 chili pepper(s), green
- 1 onion(s)
- 100 g Parmesan
- salt and pepper

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes
Southern Corn Casserole
First, drain the corn. Chop the corn kernels, potatoes, and onion (this is quickest with a food processor). In a bowl, combine the above ingredients with sour cream, eggs, flour, finely chopped or diced cheese, finely chopped chili pepper, and seasonings. Sprinkle the mixture with Parmesan cheese in a greased casserole dish and bake for about 60 minutes at 175°C (350°F). This makes a delicious side dish for sweet and sour meat dishes and salads.
