Ingredients for 2 servings:

  • ¼ head of lettuce, green
  • 2 leaves of lettuce (romaine lettuce)
  • 4 cherry tomatoes
  • 1 tbsp vinegar (balsamic vinegar)
  • ½ tsp grainy mustard
  • 4 tbsp olive oil
  • 1 sprig(s) rosemary
  • ½ slice(s) toast bread
  • 1 tbsp pine nuts
  • 150 g cheese (young soft goat cheese)
  • 1 tsp vinegar (raspberry vinegar)
  • some salt and pepper, black

Delicious salad that you rarely get in Italian restaurants

Cut the romaine lettuce into thin strips and tear the lettuce into pieces. Halve the cherry tomatoes and toss everything in a large salad bowl. For the dressing, combine the two vinegars, add the mustard, salt, and black pepper, and toss lightly into the salad along with 2 tablespoons of oil. Tear the rosemary leaves and cut the toast into small cubes. Lightly fry both ingredients and the pine nuts in the remaining oil over low heat until the bread is crispy. Then spread it over the salad. Remove the pan from the heat, cut the goat cheese into 1 cm thick slices, and add to the remaining oil in the pan. Return the pan to the heat and heat the cheese gently until warm. Be careful not to melt the cheese. Arrange the finished slices on top of the salad and sprinkle with pepper. Serve with freshly baked bread with aioli or garlic butter.
