Ingredients for 1 servings:

  • 300 g flaxseed meal
  • 1 tsp baking powder
  • 1 tsp salt
  • 5 egg whites
  • 2 eggs
  • 125 ml water, cold
  • 6 tbsp olive oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

for a 30 cm loaf pan

Mix the flaxseed, baking powder, and salt. In a large bowl, beat the egg whites and eggs with the whisk attachment of a hand mixer for about 5 minutes until very creamy. Stir in 125 ml of cold water and stir in the flaxseed mixture in several portions. Stir in the oil and pour the mixture into a 30 cm loaf tin lined with baking paper. Bake in a hot oven at 200 degrees top/bottom heat, or 180 degrees fan-assisted, on the rack in the lower third of the oven for about 30 minutes. Let the bread cool in the tin on a wire rack for about 15 minutes, then turn it out and let it cool completely. Tip: For a little more bite, mix 2 tablespoons of sunflower seeds into the dough.
