Low-carb banana cinnamon muffins

Ingredients for 1 servings:

  • 30 g protein powder (vanilla)
  • 1 egg(s)
  • 1 banana(s), ripe
  • 1 tsp baking powder
  • 1 tsp cinnamon powder
  • 2 tbsp low-fat curd cheese
  • 1 pinch of salt
  • 2 tbsp nuts, chopped, optional

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Mash the banana with a fork. Add the egg, whisk, and mix in with the low-fat curd cheese. Add the protein powder along with the baking powder, cinnamon, and a pinch of salt, and mix everything into a smooth batter. Optionally, you can now add the chopped nuts for a crunchy effect. Pour the batter into muffin cups (I prefer silicone ones). This amount makes 3 muffins. Bake the cups for 15 minutes in a preheated oven at 175°C. I eat these muffins for breakfast. They’re also a great healthy snack in the office when you’re craving something sweet. Other options: Instead of the nuts, you can also add chocolate pieces (dark chocolate with at least 70% cocoa content). Or both!
