Ingredients for 2 servings:
- 500 g broccoli
- 200 g cheese, grated, e.g. Cheddar, Gouda or Mozzarella,
- 60 g almonds, ground
- 2 eggs
- some salt and pepper
- 2 small onions
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes
Wash the broccoli and cut the florets from the stem. Then boil the florets until soft. Meanwhile, combine the cheese, almonds, eggs, salt, and pepper in a bowl. Finely chop the onions and add them to the bowl. Drain the cooked broccoli well and add them to the remaining ingredients. It’s best to knead all the ingredients together using disposable gloves. Form the mixture into small nuggets and place them on a baking sheet lined with baking paper. Bake in an oven preheated to 180°C (convection oven) for about 15 minutes on the middle shelf until golden brown. Note: I personally like to use grated cheddar, as it adds a distinctive flavor, whereas mozzarella, for example, is more neutral. You can also mix cheeses.
