Ingredients for 1 servings:
- 30 g cashews, alternatively ground hazelnuts or almonds
- 100 g oat bran
- 250 g low-fat curd cheese
- 100 g erythritol (sugar substitute)
- 2 tbsp cocoa powder, heavily deoiled
- 1 egg(s)
- 1 tsp baking powder
- 12 cashew nuts as topping
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes
approx. 12 cookies
Grind 30 g of cashews. Mix all ingredients. Form the mixture into 12 balls, preferably with slightly moistened hands, and flatten them on a baking sheet lined with parchment paper. Top each cookie with a cashew. Bake the cookies in a preheated oven at 170°C (top/bottom heat) for about 25 minutes.
