Low-carb cauliflower base

Ingredients for 1 servings:

  • 600 g cauliflower (cauliflower florets)
  • 5 eggs, size M
  • 500 g cheese, grated
  • 2 tbsp chia seeds
  • some salt

Instructions

Working time approx. 10 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

for further processing for pizza, tarte flambée, etc.

Preheat the oven to 160°C fan/convection oven. Wash the cauliflower florets (about one large cauliflower) and drain well. They should no longer be wet. Then grate them until they are the size of rice grains. Mix all the ingredients with a wooden spoon (the chia seeds will absorb some of the moisture from the dough) and spread them on a baking sheet lined with baking paper. If chia seeds have been used, let the mixture stand for 10 minutes before spreading it on the baking paper. Bake the dough for about 25-30 minutes. If desired, further process the base, e.g., top it like a pizza or make a tarte flambée. Bake for another 10-15 minutes.
