Low-carb chicken and Brussels sprout gratin

Ingredients for 4 servings:

  • 400 g chicken breast fillet(s)
  • 1 kg Brussels sprouts
  • 100 g diced ham
  • 3 small onions
  • 200 g cream cheese
  • 150 g cheese, grated
  • salt and pepper
  • 1 tsp rapeseed oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Preheat the oven to 200°C (top/bottom heat). Cook the trimmed Brussels sprouts in salted water for about 10 minutes. Then place the drained Brussels sprouts in a casserole dish. Fry the diced ham in a pan with rapeseed oil until crispy. Dice the onions and fry briefly with the ham cubes. Spread the ham cubes and onions over the Brussels sprouts. Cut the chicken breast fillet into small pieces and sear them in the pan. Arrange the chicken in the casserole dish. Distribute the cream cheese in small portions in the casserole dish. Sprinkle everything with cheese. Bake in the preheated oven on the middle rack for about 20 minutes.
