Low-carb chocolate pudding without protein powder

Ingredients for 1 servings:

  • 3 tsp baking cocoa
  • 3 tsp xylitol (sugar substitute) light
  • 250 ml plant milk (plant drink) (cashew milk)
  • 1 tbsp butter
  • 2 tsp psyllium husks
  • possibly liquid sweetener

Instructions

Working time approx. 2 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 7 minutes

Mix the baking cocoa and Xucker light together and stir in the cashew milk. Then heat everything in a saucepan. Bring to a boil briefly. Remove from the heat, stir in the butter, and let it melt. Depending on the desired consistency, stir in 2 or 3 slightly heaped teaspoons of psyllium husk and let it swell for one minute. Season to taste with liquid sweetener. The cashew milk can, of course, be substituted with any other milk, but I like cashew milk and it’s very low in carbohydrates. The butter isn’t essential, but it adds good flavor and a bit of fat if you’re following an LCHF diet. Psyllium husks belong in any good LCHF kitchen, as they contain virtually no carbohydrates and have good swelling and “mucus” properties.
