Ingredients for 1 servings:

  • 130 g desiccated coconut
  • 100 g almond(s), blanched and ground
  • 200 ml coconut milk
  • 50 g vanilla-flavored protein powder, e.g., whey, optional

Working time approx. 5 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 5 minutes

Combine 100g of desiccated coconut, coconut milk, almonds, and protein powder (optional) in a bowl and mix thoroughly. Cover and refrigerate for 1 hour. After 1 hour, the dough should have a firm consistency. Now, use a teaspoon to scoop out portions. Shape the scooped portions into small balls with both palms and then roll them in the remaining 30g of desiccated coconut. This mixture makes about 30 balls. They’ll keep for up to 5 days in the refrigerator.
