Low-carb cottage cheese muffin from the Omnia oven

Ingredients for 7 servings:

  • 200 g cottage cheese
  • 3 eggs, size M
  • 1 organic lemon(s)
  • 35 g oat bran
  • 20 g psyllium husk flour
  • 20 g golden linseed
  • 10 ml corn germ oil
  • 4 g baking powder
  • n. B. Liquid sweetener
  • 1 pinch of salt

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Wash and dry the lemon thoroughly. Grate the zest and squeeze the juice. Combine all ingredients in a bowl and mix with a spoon. Stir until just combined. Divide the batter between 7 muffin cups. Place the Omnia oven on top of the gas stove on the lowest burner. Bake for 5 minutes on high. Then reduce the heat to medium-high for 25-30 minutes until golden brown. Check with a skewer after 25 minutes. A quick tip: These muffins can also be prepared in the regular oven. Preheat the oven to 185°C (top/bottom heat) and bake on the middle rack for approximately 25-30 minutes.
