Ingredients for 3 servings:

  • 400 g minced beef
  • 300 g carrot(s)
  • 100 g tomato paste
  • 600 ml vegetable stock
  • 2 medium-sized bell peppers
  • 1 m.-sized onion(s)
  • 2 cloves garlic
  • 3 tbsp crème fraîche or sour cream
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 55 minutes; Total time approx. 1 hour 10 minutes

Brown the minced meat in a large pot. Finely chop the onion and garlic and add it. Peel the carrots, cut them into small slices, and add them to the minced meat. Continue to fry everything for 5 minutes, stirring occasionally. Add the tomato paste and mix well. Then deglaze with the stock, bring to a boil, and simmer covered over low heat for 40 minutes. Cut the bell peppers into small sticks and add them about 10 minutes before the end of the cooking time. Finally, season with salt and pepper. Serve and place a dollop of crème fraîche on each plate.
