Ingredients for 2 servings:

  • 200 g mozzarella, grated
  • 3 egg yolks
  • 1 tbsp olive oil
  • 1 tbsp butter

Instructions

Working time approx. 25 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 50 minutes

Melt the mozzarella in a double boiler or in the microwave. Stir the egg yolks, one at a time, into the melted mozzarella until a smooth batter forms. Divide the dough into 4 portions and let each portion rest in the refrigerator for 15 minutes. Rub your hands with a little olive oil and shape the dough into 4 finger-thick rolls. Cut the roll into pieces about 2 cm long and press them down lightly with a fork. Heat the butter in a pan and fry the gnocchi until golden brown on all sides. A quick tip: Grated mozzarella has a lower liquid content than mozzarella balls in brine. For 2 portions, one has 525 kcal.
