Ingredients for 2 servings:
- 5 m.-sized eggs
- 1 pinch of salt
- 300 ml milk or milk substitute
- 120 g almond flour or ground almonds
- 30 g psyllium husk flour
- 50 g erythritol (sugar substitute)
- 1 pinch(s) cinnamon powder
- 2 tbsp oil
- Erythritol (powdered sugar substitute) for sprinkling
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes
no flour, low in carbohydrates
First, separate the eggs and beat the egg whites with a pinch of salt until stiff peaks form. Then, in another bowl, beat the egg yolks with erythritol (or ground to powder) and cinnamon until very foamy. Then, add the milk or plant-based milk substitute, followed by the almond flour and psyllium husk flour. Carefully fold the egg whites into the egg mixture. Spread a little oil in a pan and heat until very hot. Then, add the batter. Break the batter into smaller pieces with a wooden spoon, continue frying, turning the pieces several times, and fry until golden brown. Sprinkle the Kaiserschmarrn with powdered erythritol and serve with no-sugar-added applesauce.
