Ingredients for 1 servings:
- ½ tsp salt
- ¼ tsp baking soda
- 900 g almonds, ground
- 75 g margarine
- 4 eggs
- n. B. Liquid sweetener
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
simple, low carb – for 12 muffins
First, separate the eggs into egg whites and yolks. Add a pinch of salt to the egg whites and beat with a hand mixer until stiff peaks form. Beat the egg yolks with the margarine and the remaining salt for 1-2 minutes until fluffy. Then add the baking soda and ground almonds to the egg yolk mixture and mix. Add the sweetener if desired. Finally, fold the egg whites into the egg yolk mixture. Divide the batter evenly among 12 prepared muffin cups. Bake for 20 minutes at 150°C (top/bottom heat).
