Ingredients for 1 servings:

  • 2 cups cottage cheese
  • 4 m.-sized eggs
  • 1 pack of grated Gouda, approx. 200 g
  • 30 g almonds, ground
  • 1 large bell pepper(s)
  • 1 pack of cooked ham, approx. 100 g
  • 1 pack of salami, approx. 100 g
  • 2 large tomatoes
  • 1 pinch of salt
  • 1 tsp oregano
  • 1 tsp pizza seasoning

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes

Shake pizza for a baking tray

Mix the cottage cheese, eggs, and almonds in a food processor or a regular hand mixer with a whisk. Chop the remaining ingredients—in my case, bell peppers, cooked ham, salami, and tomatoes—into small pieces with a knife. You can also use other topping ingredients. Now add all the chopped ingredients and the seasonings to the bowl with the dough. I always use pizza seasoning, oregano, and a little salt; you have to experiment to see what tastes best to you. Add the Gouda cheese to the bowl and mix everything thoroughly until everything is well combined and the dough is even. Spread the dough evenly on a baking sheet lined with baking paper, ensuring the entire baking paper is covered. Bake in an oven preheated to 200°C (fan oven) for about 35 minutes. You’ll know the pizza is done when the crust, which is usually thinner, starts to brown.
