Avocado salad with apple

Ingredients for 1 servings:

  • 1 lettuce heart(s)
  • 1 avocado(s)
  • 1 tomato(s)
  • 1 egg(s), hard-boiled
  • ½ apple
  • 1 tbsp oil
  • 1 tbsp herb vinegar
  • salt and pepper
  • 150 g yogurt
  • 1 tsp mustard, medium hot

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 15 minutes

Halve the avocado, remove the pit, and finely chop the flesh. Core the apple and finely chop the flesh. Chop the tomato. Wash, drain, and finely chop the lettuce. Chop the egg. Place the avocado, tomato, and apple in a bowl and toss with the vinegar and oil. Let it sit for a moment. Fold in the lettuce and add the egg. Mix the yogurt and mustard well and gently stir into the salad. The salad tastes best when it has been left to stand for a while and is at room temperature.
