Ingredients for 1 servings:

  • 130 g flaxseed flour
  • 50 g chia flour
  • 30 g coconut flour
  • ½ pack of baking powder
  • 1 tsp salt
  • 1 tbsp olive oil
  • 200 ml water, hot

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Mix all ingredients together and knead in a food processor, adding hot water. The dough should come away from the hook and have a dough-like consistency. Place the dough on a baking sheet and roll it out using a rolling pin, for example. Cover with cling film to prevent sticking, to a thickness of no more than about 4 mm. Use a fork, for example, to prick holes in the dough to prevent bubbles from forming. Preheat the oven to 200°C (top/bottom heat) and bake the base on a baking rack (a baking sheet makes the dough mushy) on the middle shelf for at least 10 minutes. It’s better to add a little more than too little, as this greatly influences the final consistency. Top with as desired and return to the oven for another 10 minutes. Note: According to EU guidelines (also stated on the chia flour packaging), you should only consume 15 g of chia per day. On other continents or in the country of origin (Latin America), there is a higher limit or no limit at all. If you have concerns about this, feel free to reduce the recipe to 30 g of chia flour (ingredients for 2 people). In my opinion, the EU is just being cautious about new foods.
