Ingredients for 1 servings:

  • 150 g low-fat curd cheese
  • 4 eggs
  • 50 g almonds, ground
  • 50 g flaxseed meal
  • 1 tbsp coconut flour
  • ½ pack of baking powder
  • ½ tsp salt
  • 1 handful of sunflower seeds
  • pumpkin seeds

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 50 minutes

Preheat the oven to 150 degrees Celsius. Combine the low-fat quark, eggs, ground almonds, crushed flaxseed, coconut or almond flour, baking powder, salt, and sunflower seeds in a bowl until smooth and lump-free. A tablespoon is enough to mix everything thoroughly. Line a loaf pan with baking paper. Pour the blended mixture into the pan and smooth it evenly in the corners with a tablespoon. Sprinkle with a few pumpkin seeds and bake for 45 minutes.
