Ingredients for 1 servings:
- 100 g flaxseed, crushed
- 1 egg(s)
- 1 tbsp, heaped low-fat curd cheese
- 1 tsp mustard
- 2 tomatoes
- 2 garlic cloves
- 2 tbsp olive oil
- 3 tomatoes, dried
- 1 tbsp oregano
- Sea salt
- black pepper
- 50 g medium-aged Gouda
- e.g. spinach
- e.g. broccoli

Preheat the oven to 180°C (top/bottom heat). Blend the flaxseeds until finely ground. Then, using a whisk, combine the flaxseeds, egg, mustard, and low-fat curd cheese and place the mixture on baking paper. Using the baking paper, form a ball. Place a second piece of baking paper on top and roll it out thinly with a rolling pin. Place the rolled-out base, using the lower baking paper, onto a baking sheet and place in the oven for 10 minutes. For the sauce, finely chop the tomatoes, sun-dried tomatoes, and garlic and mix together with olive oil, oregano, salt, and pepper in a large bowl. Place in a hot pan and cook for about 2 minutes, until the garlicky aroma is noticeable. Spread the tomato sauce over the base and top with spinach and broccoli. Then top with the cheese and bake at 220°C for 10-15 minutes, depending on how crispy you like it. Remove from the oven and enjoy!
