Ingredients for 2 servings:

  • 500 g cauliflower
  • 4 tbsp double cream cheese
  • 1 tbsp butter or cream
  • salt and pepper
  • n. B. Nutmeg

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour

Mashed potatoes without potatoes, made from cauliflower and cream cheese

Divide the cauliflower into florets and soak it in well-salted water for 1/2 hour, removing any remaining debris. Then boil it in a little fresh salted water for about 15 minutes until tender. Drain well and puree while still hot with an immersion blender or press it through a potato ricer. Combine with butter and cream cheese and season with salt, pepper, and nutmeg, if desired. Serve warm. Delicious with a steak and fresh, crisp lettuce. Tip: If you like, you can mix in more cream cheese.
