Ingredients for 6 servings:
- 200 g soy granules
- 1 liter of milk
- 200 g erythritol (sugar substitute)
- 1 pack of lemon peel
- 3 eggs
- 80 g butter, soft
- 500 g quark
- 1 lemon(s), juice
- 1 bottle of lemon flavor
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes
Preheat the oven to 180 degrees Celsius (convection oven). Heat the milk with the erythritol and lemon zest, but do not let it boil, as this can make the lemon bitter. Remove from the heat, add the soy granules, and let it sit for 10 minutes. Meanwhile, beat the eggs with the softened butter until frothy, then add the quark, lemon juice, and flavoring. Mix everything with the soy mixture. Pour into a greased baking dish and bake for 60 minutes. We like to eat it with cold canned fruit. Tip: For a slightly firmer consistency, add a sachet of vanilla pudding powder.
