Ingredients for 2 servings:
- 300 g leaf spinach
- 300 g mushrooms, fresh
- 200 g feta cheese
- 2 small onions
- 3 tbsp olive oil
- 3 garlic cloves
- n. B. Pfeffer

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Dice the onions and garlic, slice the mushrooms, and sauté them in olive oil in a pan. Add a little salt to help the mushrooms release their liquid. Then add the spinach. Once it has shrunk to the desired consistency, turn off the heat and crumble the feta over the vegetables, waiting until it has melted slightly. Total: approximately 1400 kcal and 20 g carbs. It can, of course, be enhanced with ham or bacon, but it’s intended as a vegetarian alternative to the often meat-heavy low-carb options.
