Low-carb vegetable pan Bolognese style

Ingredients for 1 servings:

  • 150 g minced beef or vegetarian minced meat
  • 1 can tomatoes, chopped
  • 1 small zucchini, green
  • 120 g mushrooms or chanterelles, fresh
  • 1 shot of red wine
  • some salt and pepper
  • 1 tsp herbs de Provence
  • some garlic
  • some olive oil
  • 2 tbsp Parmesan, freshly grated
  • 1 small onion(s), optional

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

also possible with vegetarian minced meat or without it

Wash the zucchini, halve lengthwise, and slice. Trim and slice the mushrooms, if desired. Brown the ground beef in a pan without fat, adding a finely chopped onion if desired, then season with salt, pepper, and herbs, and add the tomatoes. Add the garlic, or alternatively, garlic or Society Garlic Salt (in my recipes), red wine, and olive oil. Add the chopped vegetables, or other vegetables such as peppers, eggplant, etc., and simmer for about 15 minutes (depending on how tender you want them). Transfer to a plate, sprinkle with Parmesan cheese, and garnish with basil if desired. Vegetarians can use my vegetarian ground beef (in my recipes), for example. However, this should be prepared separately in a pan and added at the end.
