Low-carb vegetable strudel with bacon and feta

Ingredients for 2 servings:

  • 250 g low-fat curd cheese
  • 100 g cheese, grated
  • 3 eggs
  • 2 tbsp olive oil
  • 1 bell pepper(s), red
  • 1 zucchini
  • 1 kohlrabi
  • 2 spring onions
  • 2 garlic cloves
  • 1 small can of corn
  • ½ pack of feta cheese
  • 50 g bacon cubes
  • ½ cup natural cream cheese

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

First, prepare the strudel dough from quark, cheese, and eggs. Simply mix everything together well, spread it on a baking sheet lined with baking paper, and bake at 200 degrees Celsius for 15 minutes. Then let it cool slightly. Chop all the vegetables, except for the corn (as small as possible; I used the Thermomix), then fry everything in olive oil. Spread the cooled strudel with cream cheese, spread the vegetable mixture on top, scatter the corn and bacon cubes on top, and top with crumbled feta. Roll it up like a strudel and return it to the preheated oven for another 10 minutes. Serve with a green salad.
