Ingredients for 1 servings:

  • 3 eggs
  • 1 tbsp xylitol (sugar substitute)
  • 1 pinch of salt
  • 2 tbsp butter, melted
  • ¼ tsp baking powder
  • 50 g coconut flour

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

without flour and sugar, for about 4 waffles

Beat the eggs with Xucker and salt until frothy. Mix the baking powder and coconut flour together and fold in alternately with the melted butter. Bake the waffle batter as usual in a greased waffle iron. Serve with whipped cream, ice cream, or fruit. Note: The waffles will rise quite a bit, so don’t add too much batter—it’s better to use less than too much. Tastes delicious, just like real waffles.
