Low-carb waffles with oat flakes

Ingredients for 1 servings:

  • 50 g oat flakes, fine
  • 100 g protein powder
  • 75 g coconut oil
  • 4 egg whites
  • 2 egg yolks
  • 7 g baking powder, approx. 1/2 pack
  • n. B. Sweetener

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Belgian waffles

Beat the egg whites with a pinch of salt until stiff peaks form. Then mix together the coconut oil, sweetener, and the two egg yolks. In a separate bowl, combine the protein powder, oatmeal, and baking powder. Mix all ingredients with a hand mixer or food processor until the batter becomes thick. Pour 2-3 tablespoons of batter per waffle into the waffle iron. The waffles are ready when they have reached the desired brown color; most waffle irons have a small light that lights up when the waffles are done. With older waffle irons, butter or coconut oil should be added to the baking surface to prevent the waffles from burning. Suitable toppings: syrup, yogurt, quark, almond butter, compote, applesauce, jam.
