Low-Carb Zucchini Fries

Ingredients for 1 servings:

  • 2 m.-large zucchini
  • 50 g almond(s), ground
  • 30 g Parmesan, freshly grated
  • 1 pinch of salt
  • 1 egg(s)
  • rosemary
  • Paprika powder
  • oregano

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

French fries substitute

Preheat the oven to 220 degrees Celsius (fan). Cut the zucchini into strips and season with salt. Mix the almonds, Parmesan, and spices in a bowl, then whisk the egg in another bowl. First dip the zucchini sticks in the egg mixture and then toss them in the almond-Parmesan mixture until evenly coated. Place the breaded zucchini fries next to each other on a baking sheet lined with baking paper and bake for about 10 minutes until golden brown. First, I should mention that these are a French fry substitute, and the zucchini fries still taste like zucchini. I serve them with low-carb ketchup. Per serving (about 350 g zucchini): 577 kcal, 38 g protein, 9 g carbohydrates, 41 g fat.
