Low-fat sausage salad with mini bran muffins from the microwave

Ingredients for 1 servings:

  • 100 g ham (cold cuts)
  • 100 g turkey breast (cold cuts)
  • 100 g zucchini
  • 100 g cocktail tomatoes
  • 2 spring onions
  • 2 large pickles
  • 1 tbsp vinegar
  • 1 tsp olive oil
  • some mustard
  • some chives
  • some salt and pepper
  • chili paste
  • 20 g oat bran, alternatively wheat or spelt bran
  • 5 g baking powder
  • 50 g low-fat quark or cream cheese
  • 1 egg(s)
  • some salt and pepper
  • some herbs, Mediterranean

Instructions

Working time approx. 20 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 35 minutes

Chop all the sausage salad ingredients as desired and season with vinegar, olive oil, a little mustard, herbs, salt, pepper, and chili, if desired. Mix everything thoroughly. For the bran muffins, combine 20g of wheat, oat, or spelt bran with baking powder, salt, pepper, and herbs. Now add 50g of quark or cream cheese and an egg, and mix everything with a splash of water if desired until smooth. Let it swell for 10 minutes, then microwave it in a suitable dish on high for about 3-5 minutes.
