Lukewarm Cauliflower Salad with Lime and Mustard Dressing
The perfect lukewarm cauliflower salad with lime and mustard dressing recipe with a picture and simple step-by-step instructions.

- 1 Cauliflower approx. 1 kg
- 1 Can Chickpeas
- 1 tsp Cinnamon
- 2 Apples
- 1 Red Paprika
- 200 g Feta
- 4 Stems Leaf parsley
- 3 Stems Fresh mint
- 0,5 Lime
dressing
- 1 tbsp Honey
- 1 tsp Mustard
- 1,5 Limes, the juice
- 2 Garlic cloves
- 6 tbsp Olive oil
- Salt
- Black pepper from the mill
- First pour the chickpeas over a sieve, rinse with cold water and drain well. Then heat some oil in a pan and roast the chickpeas there for about 2 minutes while turning, then dust the cinnamon over it and roast for another 4 minutes – remove from the pan and let cool.
- Wash, quarter, core (do not peel) the apples and cut into small cubes and place in a salad bowl, pour the juice of half a lime on top and mix. Core the peppers and cut into fine cubes and also add to the salad bowl.
- Now cut the cauliflower into large pieces and grate with a cheese grater. Bring salted water to the boil in a saucepan and blanch the cauliflower for 4 – 5 minutes, pour over a sieve and drain.
- In the meantime, stir the dressing. To do this, mix the honey with the mustard and the juice of the 1.5 limes with salt and pepper, finely grate the garlic cloves and mix in as well and then fold in the olive oil to make a nice, creamy dressing. Now chop the mint and parsley.
- Now add the still warm cauliflower to the apple and pepper cubes. Add the herbs and dressing and mix well. Now add the chickpeas and crumble the feta and also add and fold into the salad and, if necessary, season with salt and pepper.
