Lukewarm lentil salad

Ingredients for 2 servings:

  • 200 g lentils, red
  • 400 ml vegetable stock
  • 1 bell pepper(s), red
  • 2 spring onions
  • 100 g arugula
  • 4 tbsp lemon juice
  • 3 tsp honey
  • 1 tbsp oil
  • pepper, black

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

WW suitable, great light dinner

Cook red lentils in 400 ml vegetable broth for about 10 minutes, discarding any excess broth. Clean and dice the bell peppers. Clean the spring onions and slice them into rings. Clean the arugula. Make a dressing from lemon juice, oil, pepper, and honey. Combine the vegetables and lentils in a bowl with the dressing. Serve lukewarm.
