Baked semolina dumplings

Ingredients for 10 servings:

  • 150 g semolina
  • 500 ml milk
  • Salt
  • nutmeg
  • 40 g butter
  • 2 m.-sized eggs
  • lots of oil for frying

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 10 minutes

as a soup garnish or dessert

For the dumplings, bring milk to a boil with salt, nutmeg, and butter. Stir in the semolina, let it swell slightly, and then let it cool. Beat the egg whites until stiff peaks form. Stir the egg yolks into the semolina mixture, then fold in the beaten egg whites. Form small dumplings and fry them in hot oil until golden brown. We serve these dumplings as a soup garnish on holidays. Half of the dumplings, however, are eaten beforehand with a cinnamon-sugar mixture while they’re frying!
