Lukewarm Nashi pear and chicken salad

Ingredients for 1 servings:

  • 1 chicken thigh, cooked
  • ½ onion(s), red
  • ¼ clove(s) garlic
  • ½ Nashi pear(s)
  • 1 tsp butter
  • 1 tsp olive oil
  • ½ tsp pumpkin seed oil
  • ½ tsp brown sugar
  • salt and pepper
  • 1 tsp soy sauce
  • Cayenne pepper
  • Coriander powder

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

an Asian-inspired starter

Finely dice the onion and sauté in butter with a little salt. Remove the meat from the chicken thigh, remove the bones, cartilage, and skin, tear it into small pieces (do not cut), and add it to the sautéed onion cubes. Drizzle with olive oil, season, stir, and continue to fry over low heat. Peel and finely dice the Nashi pear, mix with the soy sauce and sugar, let it sit for a while, then add it to the pan and stir. Season with cayenne pepper and coriander. Continue to fry over low heat for a few minutes until all the ingredients are hot. Transfer to a serving ring, press down gently, drizzle with pumpkin seed oil, and let it cool slightly so the dish is still lukewarm. Peel off the ring and garnish as desired (in the picture with raw onion rings, balsamic cream, and the green part of a spring onion).
