Chicken breast with leaf spinach and tagliatelle

Ingredients for 2 servings:

  • 500 g fresh leaf spinach
  • 300 g chicken breast fillet(s)
  • 250 g tagliatelle pasta
  • 1 m.-sized onion(s)
  • 2 tsp oil
  • 2 tbsp dry white wine
  • 2 tsp crème fraîche
  • Salt and pepper, freshly ground

Wash and trim the spinach leaves, blanch briefly, and drain thoroughly. Peel and finely chop the onion, sauté in the oil until translucent, add the chicken breast fillet, and sear on both sides. Season with salt and pepper and deglaze with wine to taste. Cook the tagliatelle in salted water. Return the drained spinach leaves to the pot, add the crème fraîche, wine, salt, and pepper, and heat through. Plate and serve.
