Ingredients
 

Papaya salad

  • 2 Pc. Shallot
  • 1 Pc. Leek
  • 1 Pc. Red chilli
  • 1 Pc. Lemongrass stick
  • 9 tbsp Soy sauce
  • 1 tbsp Mango chutney
  • 1 tbsp Honey
  • 3 tbsp Sweet chili sauce
  • 1 tbsp Finely chopped coriander
  • 2 Pc. Papaya fresh
  • 2 tbsp Sushi vinegar
  • 2 tbsp Sweet chili sauce
  • 1 Pc. Red chilli
  • 3 tbsp Toasted sesame oil

Instructions
 

  • Fry the tuna briefly on all sides. Inside, it has to be raw. Then cut into approx. 0.5-1 cm thick slices. For the lacquer, finely chop the leek, shallots, chilli and lemongrass. Mix with the remaining ingredients. Cut the papaya into cubes and mix with the marinade ingredients. Arrange the tuna on hot plates and cover with the lacquer.
