Ingredients for 2 servings:
- 1 cup rice (lupin rice)
- 1 zucchini
- 2 carrots
- 1 stalk(s) leek
- 2 garlic cloves
- 1 tbsp ginger, chopped
- 3 tbsp olive oil
- Soy sauce
- chili flakes
- salt and pepper

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
vegan, quick and very tasty
Cook the lupin rice according to the package instructions. Meanwhile, chop the vegetables. First, fry the ginger and garlic in the olive oil for about 1 minute. Briefly toast the chili flakes to taste. Add the remaining vegetables and sauté for about 3-4 minutes. The vegetables will still be nice and crunchy. Add the rice to the pan and fry briefly. Season with salt, pepper, and soy sauce. I also add a pinch of kala namak. A delicious meal with little fat and few carbohydrates, but still very filling.
