Lupin schnitzel

Ingredients for 1 servings:

  • 30 g lupin flour
  • 15 g gluten
  • 15 g chickpea flour
  • ¼ tsp herbal salt
  • some chili flakes
  • Pepper, freshly ground
  • some Biobin (1 scoop full)
  • 1 pinch(s) paprika powder
  • 1 pinch(s) of turmeric powder
  • 2 pinch(s) baking powder
  • 70 ml water
  • some coconut oil, for frying
  • 2 tbsp cornflakes, without sugar, for breading

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 6 minutes; Total time approx. 16 minutes

a quick vegan schnitzel

Mix all dry ingredients thoroughly, then add the water to form a firm, easily pliable dough. Depending on the flour, use more or less water. Form schnitzels. Crush the cornflakes. Roll the schnitzel in the flour and fry in the heated coconut oil in a pan over medium heat until golden brown, about 2-3 minutes on each side.
