Ingredients for 1 servings:

  • 100 g sugar
  • 150 g flour, 550
  • 50 ml extra virgin olive oil
  • 10 g baking powder
  • 3 eggs
  • 2 pinches of ground vanilla
  • 3 apples, sour
  • some cinnamon and sugar for sprinkling
  • 1 tbsp almonds, chopped for sprinkling
  • some butter flakes for topping
  • Butter or margarine and breadcrumbs for the mold

Whisk the sugar and eggs thoroughly until creamy. Combine the flour, baking powder, and vanilla and stir into the egg and sugar mixture, then stir in the oil and stir until a creamy batter forms. Peel the apples, cut them into eighths, and cut them into smaller, flat pieces. Place about 2/3 of the batter into the greased and breadcrumb-coated pan. Arrange the apples on top, sprinkle with a little cinnamon and sugar, and then pour the remaining batter on top. It’s okay if some apples aren’t covered in batter. Sprinkle with the almonds and spread a few flakes of butter over the batter. The taste of olive oil will disappear after baking, so don’t worry; you can use it to make cakes. However, if you don’t like it, you can use sunflower oil, for example. I baked this again in an Omnia oven on top of the gas stove, using the smallest gas flame, set slightly higher than very low. Baking time: approximately 60 minutes. Otherwise, the batter is suitable for a 22 cm springform pan. In a regular oven, I would bake the cake at 180 degrees Celsius for about 50-60 minutes. Please do a skewer test to check the doneness.
