Ingredients for 2 servings:

  • 2 spring onions
  • 1 bell pepper(s), red
  • 1 bell pepper(s), yellow
  • 2 tomatoes
  • 250 g lupin strips
  • 1 tbsp tomato paste
  • 1 tsp harissa
  • 1 pinch of salt
  • 2 tbsp olive oil
  • 6 tomatoes, dried

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

vegan, egg-free, dairy-free

Clean the vegetables. Cut the bell peppers and sun-dried tomatoes into strips, and dice the tomatoes. Dice the white parts of the spring onions. Slice the green parts into rings. Fry the lupin strips in olive oil. Add the diced onions and sun-dried tomatoes and fry. Add the bell pepper strips and diced tomatoes and sauté briefly. The vegetables should still be crunchy. Stir in the tomato paste and caramelize briefly. Season with salt and harissa. Remove the pan from the heat and stir in the spring onion rings. Serve with fried polenta slices.
