Lusatian-style potato salad

Ingredients for 4 servings:

  • 12 m.-sized potatoes
  • ½ cucumber(s)
  • 1 cup salad (meat salad), large
  • 1 tbsp mayonnaise
  • 3 gherkins
  • 1 onion(s)
  • some cucumber juice
  • Salt
  • pepper
  • Oil (linseed oil)

Working time approx. 30 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 30 minutes

Peel and wash the potatoes, then boil them in salted water until slightly tender. Let them cool and then slice them. Peel and dice the onion, dice the gherkins and half a green cucumber, and add them to the potatoes. Add the meat salad, mayonnaise, salt and pepper, the pickle juice, and linseed oil. Mix everything together. The salad should sit for several hours. Season to taste before serving. Tip: You can also slice 3-4 hard-boiled eggs into the salad.
