Ingredients for 2 servings:

  • 4 eggs
  • 2 tbsp sparkling mineral water
  • 1 tbsp milk
  • 1 onion(s), diced
  • 1 garlic clove(s), squeezed
  • 1 tbsp fresh ginger, sliced
  • 1 tsp chili powder
  • 1 tsp curry powder
  • 1 tsp paprika powder
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp oil
  • 2 large baguette(s) – rolls
  • 2 slices of corned beef
  • 2 tomatoes

Mix the water, milk, eggs, and spice powder well in a bowl. Meanwhile, briefly and vigorously fry the onion, garlic, and ginger in a pan with oil. Then add the contents of the bowl and mix gently with a spoon in the pan. Do not continue stirring, as otherwise the eggs will scramble. The omelet is perfect when the egg mixture is firm and a firm, browned edge has formed (approx. 5-10 minutes). In the meantime, heat the tomatoes and baguettes in the oven at 175°C for a good 5 minutes. Halve the finished omelet, cut open the baguette rolls, and top each with a slice of corned beef (you can also brush them with butter or margarine beforehand). Place a halved omelet on top of each one, add the sliced ​​tomatoes, and fold the rolls together. The Mac Omelet is ready! It tastes simply divine!
