Macadamia sauce

Ingredients for 4 servings:

  • 30 g butter
  • 2 tbsp, heaped cornstarch
  • 250 ml milk
  • 80 g macadamia nuts, grated
  • 4 tbsp Pecorino, freshly grated
  • nutmeg
  • Salt and pepper, black
  • Cinnamon
  • 40 g basil, finely chopped

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

goes well with pasta or gnocchi

Melt the butter, add the cornstarch, and toast for about 1 minute. Pour in the milk, stirring constantly. Pour in 150 ml of water, and simmer the sauce over low heat. Once it has thickened slightly, add the grated macadamia nuts and grated pecorino cheese and stir well. Season with salt, pepper, nutmeg, and cinnamon. Finally, fold in the finely chopped basil. Serve with pasta or gnocchi.
