Macaroni and cheese, vegan

Ingredients for 2 servings:

  • 300 g pasta (macaroni without egg)
  • 200 g cheese substitute, vegan
  • 400 ml soy milk (soy drink)
  • 1 onion(s)
  • 3 tbsp flour
  • 5 tbsp butter substitute or margarine, vegan, e.g. Alsan
  • e.g. yeast flakes
  • some salt and pepper
  • possibly nutmeg

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Mac & Cheese, the vegan version of the classic

Cook the macaroni as usual. Melt the fat in a pan. Finely chop the onion and fry until translucent. Then add the flour and sauté, stirring constantly. Then pour in the soy milk while stirring, and simmer for about 10 minutes. Season with nutritional yeast, salt, pepper, and nutmeg to taste. Add half of the vegan cheese (if the cheese isn’t grated, please grate or shred it), then mix everything with the cooked macaroni. Transfer to a baking dish and smooth the surface. Sprinkle the remaining half of the vegan cheese over the top. Bake for 30 minutes in an oven preheated to 200°C (400°F).
